Sunday Meal Prep

Hey everyone! Welcome to this week’s meal prep! This week was a bit weird for me. While normally I enjoy meal prep and cooking in general, there are some days where it is just a chore. This Sunday was one of those days. Not only did it feel like a chore, but it felt like it took much longer than it actually did. I’m just thankful that it was a relatively small amount of cooking to be done, instead of one of my marathon days. I pushed my way through to the end and was very glad to be done.

At least the food was tasty, including a new recipe! 

So on to the meal prep for this week, and make sure to check out the recipe at the bottom!

Spaghetti with meat sauce and cut onion for Skillet Chili Chicken

I had planned on making the Skillet Chili Chicken during meal prep. I ended up cutting up the onion and then cooking it on Wednesday.

This is actually the picture from last week’s meal prep, but I forgot to take a picture of the salads this week. I also forgot to take a pic of the breakfast burritos 🙁 I made 31!

Recipe from Leanne Ely’s “Saving Dinner” cookbook, p. 195. I did make a couple small changes. I used minced garlic instead of pressed and plain Greek yogurt instead of sour cream.

So that’s it for this week’s meal prep. I know I was a bit off of my game, but next week’s should be back on track!
