Hey everyone! I hope you all had a wonderful week. This week has been a full and busy one for me here! Busy, but very good! To top off this great week, I get to share a great Sunday meal prep with you! I had quite a bit to cook for this one, since we were out of some staples we like to keep in the freezer, plus all our regular food. Enjoy!
Our snacks this week were our regulars: Sweet Potato Banana Bites and grapes with cheese for me, Cookie Dough Protein Bites for Draz! Our mason jar salads this week were our stand-out favorite: Shredded Buffalo Chicken! I’ve been stuck on these for MONTHS now without having any desire to change them. Sorry if you guys are getting bored with them, but they are just too tasty!
Speaking of Shredded Buffalo Chicken, that is one of the freezer staples that we were out of. I always like to make a big batch of this and freeze it into portions for our weekly salads. I usually take it out of the freezer on Wednesday when I am planning our menu and grocery list for the week. This week, I realized we were out, so it got added to the list! Having a bunch of this made up just makes things easier, and that is what meal prep is all about!
Along with that, our other main freezer staple was out as well: Breakfast Burritos! I absolutely love our breakfast burritos, so these were definitely going to be made! I ended up making enough for a little over two weeks this time around.
Now on to the main dishes! This is quite possibly my favorite part of these posts. While everything else pretty much stays the same, our main dishes almost never are! I love trying out new dishes and this is where I do that the most! This week is all new recipes again, and let me just say, they turned out great. That being said, I think I’m developing a slight Pinterest addiction. It just makes finding new recipes so easy! If you want to come join me on my new Pinterest account, you will see what I mean!
I picked three new recipes for this week and I tried to pick dishes that were pretty varied. I ended up cooking Slow Cooker Chicken Fajitas, Creamy Tomato and Spinach Pasta and Kielbasa, Pepper, Onion, and Potato Hash. Draz ended up loving the pasta, while I just love how the hash turned out! The fajitas were pretty much a dinner-only meal, just for ease of assembly. For the hash, I ended up frying up a couple eggs to go with it whenever I had it, which was just delicious!
