sunday meal prep 5/22/16

Happy Sunday everyone! I hope you all had an amazing weekend! Mine was pretty good, though I am pretty sad about my vacation ending. I got a lot done and feel really rejuvenated…but I still don’t want to go back to the “real” world 🙂 Oh well…life goes on and I must return to work. And part of life going on is meal prep! I had a lot of fun with this week’s menu, with a few new dishes and a change up in my salads! Enjoy!

How I cook once and eat healthy all week long with meal prep!

To start off with, I made up some snacks and treats. I haven’t made any in a while and they were delicious! Nothing new with those. Though I have been wanting to try some new energy bites. Any suggestions?

Mason Jar Salads, Sweet Potato Banana Bites, Peanut Butter Banana Oat Muffins, Cookie Dough Protein Balls, Shredded Buffalo Chicken and Grapes with Cheese

I did change up one thing however: new salads! Draz’s salads remained the same, but I made up some taco salads for myself this week. Salsa instead of ranch, taco seasoned lean ground beef instead of shredded buffalo chicken 🙂 So tasty!

For the main dishes, I had a lot of fun this week! Everything is chicken based, kinda by accident, but that’s ok! If you haven’t noticed yet, Draz and I love chicken dishes. We had a pretty wide variety of flavors this week too. Crock Pot Creamy Ranch Chicken and One Pot Spicy Cajun Chicken And Rice were our new recipes of the week. And Healthy Kung Pao Chicken was our repeat recipe. Everything was so good! Draz surprised me by declaring that the Cajun Chicken and Rice was his favorite. I honestly expected it to be the Kung Pao Chicken. I don’t even know if I can declare a favorite for myself for this week. Each were really good in different ways.

Another great thing about this week’s prep is that it didn’t even take all that long to put together! I split up my cooking a bit, which affects the total time a little, but I don’t think I spent more than 2 1/2 hrs overall. Not bad for a whole week’s worth of food!
