sunday meal prep 6/19/16

Having a good weekend? I did, though I’ve not been feeling the best the last couple days to be honest. I am starting to feel better now though, so hopefully things will be back to normal this coming week!

Now on to the meal prep 🙂 One thing I really like about this week’s meal prep: it’s short! Ok….it’s not 2 hours or anything, but it didn’t take too much time, made a lot of food and tasted wonderful! And I still had time for an hour bike ride with Draz and made a new pendant (guys, it’s super pretty!). And if you aren’t as treat-obsessed as I am, this meal prep would only take 2-3 hours. But I am treat obsessed, so it took longer than that 🙂

Meal prep: Eat healthy, delicious food all week long and spend less time in the kitchen!

I made all the treats guys…seriously, so many treats. I may have made one of them even by impulse. This week we had more Sweet Potato Banana Bites, Peanut Butter Banana Oat Muffins, Cookie Dough Protein Balls (yay for having protein powder again!), Peanut Butter Brownie Balls and (new) Chocolate Peanut Butter Protein Balls! So as I said…all the treats.

Also new: The cheese for my grapes! I used Manchego Cheese this week. It was interesting, and tasty, but probably not my favorite. I’m not sure how soon I will use this one again if I do at all. As for the salads: Mine were a mix this week. 4 with Balsamic Vinaigrette and Tuna Quinoa Cakes, 2 with Shredded Buffalo Chicken and Ranch. Draz’s were the same as always. He likes them that way 🙂

It’s funny…sometimes it just hits me how much my cooking abilities have changed over the years. This week was one of those times. The Meatballs in Burgundy Sauce is one of the first recipes I found on my own and learned to make. While it was good, I always had the same complaint about it…the sauce was too thin. Every time I made it I was slightly disappointed, no matter how tasty it was and how easy it was to make. It’s super easy guys! This time was different. I opened up the crock pot with a plan this time 🙂 And I made the sauce thicker and this dish went from good to great! (Details in the recipe)

Slow Cooker Meatballs in Burgundy Sauce

Instructions
  1. Combine all ingredients (except noodles, cornstarch and 2 tbsp water) in slow cooker. Stir to blend. Cook on low for 10 hrs or high for 5 hrs.
  2. If desired, thicken sauce when cooked: Remove 3-4 cups of sauce from slow cooker. Mix cornstarch with 2 tbsp cold water. Then add mixture to sauce and simmer on medium-low heat until sauce is thickened. Return to slow cooker and mix well.
  3. Serve with noodles.

Instructions
  1. Preheat oven to 375. Toss potatoes with dressing in microwave-safe bowl. Microwave 7 minutes, stirring after 4 minutes.
  2. Spread chops with mustard on both sides. Combine Shake n Bake with rosemary in a shallow dish. Coat both sides of pork chops with the coating mixture. Place in the center of a foil-lined 15x10x1 in baking pan. Arrange potatoes around pork chops.
  3. Bake 30 minutes or until chops are cooked through and potatoes are tender.

All in all, this week was a week of successful dishes! Draz says his favorites are between the Meatballs and the Beef Sandwiches, though the other two are close behind. I’m honestly not sure if I can even pick a favorite. The Sesame Noodles and Beef Sandwiches were both new recipes and were delicious. The only change I would make to the noodles would be to double the sauce…but that is more of a personal preference. I love dishes with a lot of sauce!

The sandwiches were from my family’s church cookbook. Do you have any of these? I love church cookbooks! You end up with so many awesome recipes. One of the things I love about them is usually the recipes are simpler than a lot of other cookbooks and more “family” type foods. While I love cookbooks in general have a lot of them, I almost always reach for the church cookbooks first if I want something new!
