Hey all! If you read my post on Friday, you know that this week was kinda rough for me. It’s weeks like this that I am so glad I started doing meal prep. While I may not have eaten the best all the time this week (too much Chex Mix for my own good) I managed to stay mostly on track even with my energy being super low and motivation gone. After all, it doesn’t take much work to reheat food that is already prepared, right!?
And this is one of the many reasons I meal prep. You never know what is going to happen, or how a week is going to go. This week it was a lot of trouble sleeping. As some of you know, other times it’s been trips to the ER, thanks to my accident-prone-ness. But no matter what, at least I don’t have to worry much about what Draz and I are going to eat!
Ok, so before I start going on about the wonderfullness of meal prep even more than I already have….How about we just get on to the actual food!?
This week’s food was pretty awesome! I tried a bunch of new recipes, including some new snacks, and just overall enjoyed being in the kitchen 🙂 Our salads and my grape snack remained pretty much the same, though I did try a new pepper jack cheese this week.
For our snacks and more dessert-y type dishes, I made Peanut Butter Banana Oat Muffins, Sweet Potato Banana Bites, Cookie Dough Protein Bites, Healthy Peanut Butter Brownie Balls and (not pictured) Honey Garlic Cauliflower. The last two were new recipes and kinda made on a whim. The Cauliflower was mostly because I had some extra…and wow was I glad I did! These were so tasty that they didn’t even last long enough for me to take a picture of them. Draz and I both ate half for our lunch and were very happy to do so. Super tasty guys…definitely worth a try and pretty easy to make!
The Peanut Butter Brownie Balls were my first time using dates in a recipe. I loved it! These were really quick and easy to make. I did add a little bit of honey into the mixture, but I think that was mostly necessary because I had chopped dates instead of whole. I think that is why the food processor wouldn’t turn it as “paste-like” as it would have been otherwise, so not as sticky. I will definitely be making these ones again 🙂
Now on to the main dishes! All new recipes again this week: Easy Skillet Chicken Cacciatore, Skinny Lasagna Rolls and Slow Cooker Mongolian Chicken. I would say that my favorite of the week was the Lasagna Rolls! These were so tasty, pretty easy to make, plus vegetarian! Now, if you have been a reader for a while, you might notice we don’t really eat vegetarian dishes very often…pretty much never. But I have been wanting to find more dishes to make so that one dish a week could be a vegetarian option. This is definitely one of them! Draz and I both liked it. Our one complaint had nothing to do with the recipe itself. The sauce I ended up using kinda overpowered the other flavors of the dish. If you end up making this, I recommend using a sauce that isn’t too flavorful on it’s own. Next time I will find one that is a little simpler, allowing the other flavors to come through!
