Happy Sunday all! I hope you are all having a lovely weekend! This week’s meal prep is mostly dishes you may have seen before, but there is one new recipe in the mix too! I had a lot going on last weekend, so I knew when I planned this menu that I didn’t want it to take too long. The end result: some recipes that were pretty quick to come together and worked well cooking at the same time. This meal prep ended up taking about 3.5 hours of active cooking time, but only about half of that was main dishes. The rest was assembling our breakfast burritos, salads and snacks!
For our salads and treats, I didn’t change things up much. Draz’s salads were the same as always…just how he likes them 🙂 I did make my salads inspired by this Chicken Taco Salad
recipe, with some changes. This week my salads were as follows, from the bottom layer to the top:
- “dressing” made from Greek yogurt and taco sauce mixture
- sliced red onion
- canned corn
- green beans
- a sprinkle of taco blend shredded cheese
- cherry tomatoes, whole
- shredded chicken, taco seasoned
- salad mix
It turned out great! For our snacks, I made Cookie Dough Protein Balls, Peanut Butter Brownie Balls
and grapes with Gouda. I’ve been wanting to try a new protein or energy ball lately. Any suggestions?
As always though, the Thai Peanut Chicken was both Draz and my favorite dish. It’s just too tasty! I’m pretty sure Draz would have me make it every week if he could. 🙂
