sunday meal prep 8/14/16

Hey everyone! I hope you all are having a lovely weekend! Here things are pretty good…much better than they were during the week at least. I was kinda sidelined this week by a pretty nasty headache and my whole schedule was thrown off. It was severe enough that I actually got sent home due to how light and sound sensitive I was. No workouts and a lot of rest, quiet and dark for a few days and I’m back to normal! But it definitely threw my normal schedule off balance. It’s times like this that I really appreciate meal prep! Even though I couldn’t do much for a couple days we still had good healthy food!

Another exciting thing from the past week: Have you checked out Instagram Stories?! I am loving it! So, you may remember that my meal prep posts are actually staggered by one week from my actual meal prep (this week’s post is of last Sunday’s prep and so on). One thing I am having a lot of fun with on Stories is showing some behind the scenes stuff, including a sneak peek at my meal prep! Ok, so now that I have rambled on for a bit, let’s get on to this week’s meal prep! Enjoy!

How to use meal prep to plan ahead - Eat healthy, tasty food all week, You can even add in a bit extra to freeze for those future busy week's too!

I didn’t actually make any extra snacks this week. We still had some left over from the previous week, so I just put together my normal grapes and cheese and our salads.

For our main dishes, no new recipes this week, but some really delicious ones! Italian Beef Sandwiches, One Pot Garlic Pasta, Chicken Fajita Pasta and Kielbasa, Pepper, Onion and Potato Hash. Draz’s favorite of the week was probably the Italian Beef Sandwiches, while mine was the Hash. I loved having it topped with a couple fried eggs….so tasty!

Instructions
  1. Mix all ingredients in a medium bowl. Pour over beef roast in slow cooker. Cook on low 8-9 hours. Shred, reserving liquid.
  2. Serve on rolls or buns with some of the reserved liquid for dipping,

I did some prep for our freezer this week too! Along with our normal breakfast burritos I made a double batch of Buffalo Chicken Mac and Cheese. You might remember I said I was doing a bit of extra prep each week right now to get ready for a off-schedule weekend coming up. Next week I will be showing you the last part of that extra prep, but I think it’s going really well!
