Hey all! I am SO excited to be back to my normal blogging routine and to be sharing this week’s meal prep with you! This week’s prep was full of tasty recipes, both new and old, and a lesson learned. Now, if you have been following along over on Instagramduring my absence, you may have noticed that I have been having some fun on Stories each Sunday! I am loving going through each step of my meal prep and giving a behind-the-scenes look at how I prepare our meals every week. And now, on to this week’s meal prep!
For our main dishes, I made Garlic Parmesan Pasta, Chicken Vindaloo, One Pot Cheesy Chicken Broccoli & Rice, & Quick Easy Asian Chicken Stir-fry. The stir-fry originally comes from the cookbook my mom created for me throughout my childhood, which is one of my most cherished possessions. I love that I can make the same stir-fry for Draz and I that she used to make for me! It also ended up being Draz’s favorite dish of the week, which works out well too 🙂
In your skillet, heat oil over medium-high heat. Add chicken and stir-fry until done and juice evaporates. Add soup. soy sauce and garlic. Heat to a boil. Add thawed vegetables and cook over medium heat until vegetables are tender-crisp, stirring often. Serve over rice.

I decided to make some new snacks this week: Spiced Chickpeas and Healthy Pumpkin Spice Bites. And here is where the lesson comes in! I decided this week I wanted to make snacks that weren’t chocolate and peanut butter based.
So, these Pumpkin Bites…I’m following along with the recipe and I have these 3 dates that just WILL NOT chop up. I mix, run the processor, check, repeat. It took forever for them to eventually chop and mix in the with rest of the mixture. The result? A thoroughly pureed mess! Now, I was able to put them on a plate in separate….blobs…and freeze, which then allowed me to kinda make them into ball-shaped blobs haha. But they have to be kept in the freezer or they become sticky blobs. The upside? I like how they taste at least! I am going to try them again with chopped dates and see if I can’t make them properly!
