Hey everyone! I hope you all are having a lovely weekend! I have had a wonderful weekend, with the first ever Iowa BBG Meet-up, an easy meal prep (remember my posts are staggered by one week πŸ™‚ ), a home movie-date with Draz and a lot of time working on my Etsy store!

Over the past few weeks I have been preparing for a weekend where things will be very off-schedule and I don’t know how much time I will have for meal prep. With a little planning though, we will still have awesome healthy food with very little to do that week! This week was the last of my prep for that upcoming week…. I added in some extra snacks and breakfast burritos for the freezer. And you can be sure that my freezer is pretty packed now!

One of the big advantages of meal prep to me is that I’m already thinking ahead to the coming week. So thinking a little farther ahead and looking at weeks that are going to be extra busy fits right in! Now, instead of looking at the coming weekend with stress about Β my routine being all crazy and unknown, I know I am prepared. I can just be excited! This is a pretty big change for me, since I am very routine-based. It’s amazing how being organized can actually make you feel more free and flexible! Do you have any things like this that you do?

Anyways, this won’t be the last time you see me doing extra prep for a future event. This one has gone so well that I think I will be doing something similar for an even bigger event I have coming up next month! I will be attending my first blogging conference, so there will be very little time to meal prep all weekend! Plus I’m going to want to have some healthy food options to take with me for snacks and such, so that will be added in too. I’m so excited!

How to use meal prep to plan ahead - Eat healthy, tasty food all week, You can even add in a bit extra to freeze for those future busy week's too!

For the snacks and treats, I tried a couple new recipes this week. Double Chocolate Dairy-free Ice Cream is a “nice” cream with only four ingredients! It was super easy to make!Β While Draz and I both say that this doesn’t taste like ice cream to us, we both thought it was pretty tasty! I will definitely be making it again πŸ™‚ It’s a nice dessert that’s still healthy! Plus the fact that it’s made out of things that we always have on hand. The other new recipe was No Bake Maple Vanilla Latte Protein Balls, with a few small changes. I used whole wheat flour instead of almond meal and our protein powder is chocolate, not vanilla. I did add in the vanilla essence that was suggested as optional in the recipe as well. You might be shocked, but I think these might actually replace the Cookie Dough Protein Balls as our favorites! Of course, I had to make up our favorites too!Β One batch of Cookie Dough Protein Balls, putting around half in the freezer to take out next week. Some Sweet Potato Banana Bites for me and I gotta tell you, I am loving the new change I made to this recipe! I was originally adding in Special Dark Chocolate Chips into the mix right before spooning it into the muffin tins. The last couple times I have been taking a square of unsweetened baking chocolate and chopping it up and adding that in instead. It’s not a huge change, but it has made a noticeable difference and I really like it!breakfast-burritos-grapes-cheese-mason-jar-salads

Our salads were pretty much our basic this week, though I did add a few cherry tomatoes into each of mine πŸ™‚ They are tasty! Another two weeks of breakfast burritos and my grapes and cheese for the week were the same as always and just as tasty as ever!healthy-meal-prep-main-dishes

For our main dishes, I tried to keep things pretty basic this week, but I did try one new recipe: Butter Chicken Curry! I have to say, I loved this mild and saucy curry! I picked up some garlic naan to go with it and it was delicious! This will definitely be made again! That being said, we are still on the search for our favorite curry recipe. Draz like this one, but it wasn’t his favorite so far. Any suggestions?

Our other dishes were repeats for us: Thai Peanut Chicken Pasta (anyone surprised? :-p) and Unstuffed Cabbage Rolls. Both turned out wonderful! I did use some extra turkey in the Unstuffed Cabbage Rolls, just based on how the packages were weighed out. I really like how the Unstuffed Cabbage Rolls turned out, though I think I will try to spice it up a bit more next time.

sunday meal prep 6/26/16

Hey all! Happy Sunday! I hope you all had a fabulous weekend! Ours was pretty good here, though busy. A few things are still being caught up on from me being sick last week, but I think I’m getting close to caught up! Β Speaking of me being sick last week….This meal prep is quite possibly the shortest I have ever done. (keep in mind these are staggered by one week, so this post is for last Sunday’s prep) I was still feeling not-too-great, so I planned for quick prep meals and the bare minimum of active cooking. I also forgot to photograph the salads and the picture of the main prep isn’t my prettiest picture by far πŸ™ All that being said, I am really glad I still did my prep! I started feeling better on Monday and was back up and active by Tuesday and I’m so glad that I didn’t have to worry about the cooking then! All the food I did make was really tasty too, so at least there is that!

sunday meal prep 6/19/16

Having a good weekend? I did, though I’ve not been feeling the best the last couple days to be honest. I am starting to feel better now though, so hopefully things will be back to normal this coming week!

Now on to the meal prep πŸ™‚ One thing I really like about this week’s meal prep: it’s short! Ok….it’s not 2 hours or anything, but it didn’t take too much time, made a lot of food and tasted wonderful! And I still had time for an hour bike ride with Draz and made a new pendant (guys, it’s super pretty!). And if you aren’t as treat-obsessed as I am, this meal prep would only take 2-3 hours. But I am treat obsessed, so it took longer than that πŸ™‚

Hey everyone! I hope you are having a fantastic weekend so far! It’s been a bit weird for me, since Draz and I are on vacation right now. Good weird, but still weird. But I’ve been really enjoying it! I’m still planning on doing some meal prep this week, even though we are on vacation. I don’t need a repeat lesson of last time!

Now, for this week’s meal prep, most of what you are seeing is the same that we have been making lately. For good reason…it’s delicious! But I did make sure to add in something new, or at least new to the blog!! I don’t make this dish very often. It’s not quite as healthy as I usually like to try to stick to, plus it makes a lot of dirty dishes! But it is just so tasty! So when I was flipping through my cookbook trying to pick something, this is what I ended up landing on. I hope you like it!

Instructions
  1. Cook macaroni according to package directions. In a large skillet, cook beef over medium heat until no longer pink; drain. Add the tomatoes, tomato paste and sloppy joe mix. Bring to a boil. Reduce heat; cover and simmer for 10 min, stirring occasionally.
  2. Drain macaroni; set aside. In a large saucepan, saute onion in butter until tender. Stir in flour, salt, mustard and pepper until smooth. Gradually add almond milk and Worcestershire sauce. Bring to a boil; cook and stir 5-7 minutes or until thickened. Remove from heat. Stir in 3 cups cheese until melted. Add macaroni; mix well.
  3. Spread 2/3 of the macaroni mixture in a greased 13x9x2 baking dish. Spread beef mixture to within roughly 2 inches of the edges. Spoon remaining macaroni mixture around edges. Cover and bake at 375 for 30 min.
  4. Sprinkle with remaining cheese. Bake, uncovered, 5-6 min longer or until cheese is melted.

sunday meal prep 5/8/16

Hey everyone! I hope you are having a wonderful Mother’s Day! My parents came out yesterday and we had a wonderful, home-cooked meal. I’m so glad we decided to do that instead of going out to eat! πŸ™‚ Even with it being Mother’s Day, I hope you are able to take some time to do a bit of meal prep today. It does so much to make the week go more smoothly!

The meal prep I’m sharing with you today was pretty basic. We were still pretty well stocked on treats and snacks, so most of the cooking was centered around our main meals. The one thing that I am excited to share with you….my Healthier Cinnamon Bread recipe! I have been making cinnamon bread as part of my breakfast for a long time, but a while back I decided to try to clean it up and make it a bit healthier. I’m happy to say that it worked out well and we love the result!

This Spicy Goulash was actually a new recipe from Taste of Home’s 2008 Everyday Slow Cooker cookbook. As some of you know, this is one of my favorite cookbooks and one of my go-to’s when I’m stuck and nothing sounds good. We really liked this one!

Are you even surprised? After the Thai Peanut Chicken Pasta was such a hit last week, Draz asked me to make it again. Which I happily did! Expect to see more of this one soon πŸ™‚ And we hadn’t had this One Pot Garlic Parmesan Pasta in a while, so when Draz asked me to make this too, I was all for it. I love pasta! (if you couldn’t already tell that) Especially since Draz usually doesn’t make requests, so when he does I tend to go with them!

Ingredients

Instructions
  1. All of these directions are using an electric stand mixer. If you are using something else, adjust as needed.
  2. In your mixing bowl, add bananas, eggs, 1/2 cup sugar and vanilla essence. Mix on low until combined. Add unsweetened almond milk, then lemon juice; continue mixing on low.
  3. One cup at a time, slowly add whole wheat flour while mixing on low, scraping sides of bowl between each cup. After adding the last cup of flour, add the baking soda. Scrape the sides of the bowl, then mix on low briefly to fully combine.
  4. Mix 1/3 cup sugar and the cinnamon to make a cinnamon sugar mixture.
  5. Spray two loaf pans with cooking spray. Put 1/2 of the batter (or a little less) into the loaf pans; 1/4 in each pan. Sprinkle 3/4 of the cinnamon mixture on top of the batter in each pan.
  6. Add remaining batter to pans, then sprinkle with last of the cinnamon topping. Swirl with a knife.
  7. Bake at 350 for 1 hr or until toothpick comes out clean. Cool in pan for 10-15 minutes before removing from pan to cooling rack.

Hey all! I hope you all had a fantastic week and are ready to set yourselves up for an easy and healthy week with your own meal prep! This week we had an awesome meal prep, though it was a bit surprising. It started out all about the healthy snacks and ended up being all about the Thai Peanut Chicken Pasta! This was by far our favorite recipe this week, and possibly for the past few months!

As I said, this week started out being all about the snacks. And I made A LOT of snacks! Our salads were pretty much the same as always and just as delicious! I had some extra chicken this week, so I decided to whip up some more Buffalo Shredded Chicken to put in the freezer. Ok, so one of these is not quite fitting with our normal healthy focus. It’s not terrible for you, and I do use brown rice now and less sauce than I used to, but this one is pure comfort food. Do you have any recipes that are from your childhood that just make you feel better on so many levels? This one does that for me.

This Lemon Garlic Chicken is a recipe that has been in my family for generations. It was my mom’s favorite when she was growing up and mine when I was. It was even my birthday meal every year! The smell of it cooking is even a comfort to me and I was really craving some comfort when I made this menu, so this just had to be on the list. The funny thing is, I didn’t actually get any of it!! It is one of Draz’s favorites too, so he had that for lunch most days! That’s ok…it just means I need to make more soon!

  1. Preheat oven to 350. Put stick of butter in pan, in oven, to melt while oven is pre-heating. Mix all seasonings in butter and stir. Roll chicken in mixture. Sprinkle lemon pepper on chicken (optional).
  2. Put in oven for 45 minutes. Can serve with brown rice with sauce poured over. Also goes well with asparagus.

Other than the wonderfulness that is Lemon Garlic Chicken, we had two new recipes: a Melt-In-Your-Mouth Pot Roast and CPK Thai Peanut Chicken Pasta. I was actually a little hesitant about how good the roast was going to be when it was done, but it was really tasty! I used a rough ground spicy garlic mustard and it seemed to just kinda…sit on top of the roast, which is not the case with most rubs. But thankfully it was tasty and we didn’t waste a whole roast πŸ™‚ That is the one risk of meal prepping with new recipes, in that sometimes you may find one you don’t like. And we all know just how much I love new recipes!

But on to the star of the week! This Thai recipe was beyond delicious! I don’t really even have words….just the right balance of peanut, spice, cabbage and goodness. Draz took one bite and asked me to make it again next week! I see this quickly becoming a house favorite, so expect to see this one frequently. Plus it is really quick to make!
