sunday meal prep 5/29/16

Hey all! I hope everyone is having a fantastic weekend! This week has been really weird for me, being back at work and having to shift my schedule from “vacation” to “work” again. But even with that, I had a pretty good week! That weirdness did lead to me cooking one dish from this week’s menu a little later on though. I was so exhausted trying to shift my schedule back that I decided I was done cooking for the day. So the soup for this week was actually cooked on Thursday instead of Sunday. Everything else for our meal prep went as planned though, and all the recipes turned out great!

Our salads were pretty much the same as always 🙂 I also made our breakfast burritos, but somehow forgot to photograph them (told you I was having a weird week…).

The real excitement came from the all new dishes we tried this week! Our favorite by far was the Chicken Stir-fry! I ended up editing the veggies some based on what we had in the kitchen and doubled the sauce to accommodate the extra veggies. I ended up using 2 bell peppers, 1 red 1 green; roughly 1.5-2 cups broccoli, 2 cups fresh green beans and 8 oz of sliced mushrooms. This ended up delicious! I served them with the chow mein noodles we have been obsessed with lately.

The other two recipes were kinda outshone by the stir-fry, but were still really good. The soup I mentioned earlier was the Italian Orzo Spinach Soup. This one was really good, though I wish I would have sauted the carrots and celery for a little longer.

The other main dish was Seasoned Chicken, Potatoes and Green Beans. This was really tasty, though I did make one mistake that I think took it down a notch. I bought the wrong size of cream of chicken 🙁 I ended up substituting for just more chicken broth, so as you can imagine, this turned out a little less creamy that it would have otherwise. I will have to make it right next time! The other change I made was I used russet potatoes. I actually prefer red potatoes, but I had some russet that needed to be used up, so that is what got put it!

I did end up making some One Pot Garlic Parmesan Pasta at Draz’s request, but that wasn’t really planned for. It was really tasty though, as always!
