Hey everyone! I hope you are all having a lovely weekend. Ours was good! My week has been pretty busy with some fun stuff…I restarted Kayla’s BBG 1.0 and have gotten some new jewelry made too! Our food was pretty simple this week and didn’t take too long to make either.

Our snacks and salads stayed the same as always, except I tried out one new thing. For my Sweet Potato Banana Bites, I took a block of unsweetened baking chocolate and chopped it up. I mixed in that prior to baking instead of the dark chocolate chips I usually use. It turned out really good! I also made some Peanut Butter Banana Oat Muffins, which we haven’t had in a while 🙂
For the main dishes this week, I mostly made dishes we have had before, but I did make one new one – Lentil Chili! It turned out so tasty! Our other dishes for the week – Island Pulled Pork, Meatballs in Burgundy Sauce and Veggie Lasagna Rolls. Everything turned out great!
- 60 frozen meatballs
- 3 c onion chopped
- 1.5 c water
- 1 c red wine
- 2 jars beef gravy
- 1/4 c ketchup
- 1 tbsp oregano
- cooked noodles
- 2 tbsp cornstarch
- 2 tbsp water
- Combine all ingredients (except noodles, cornstarch and 2 tbsp water) in slow cooker. Stir to blend. Cook on low for 10 hrs or high for 5 hrs.
- If desired, thicken sauce when cooked: Remove 3-4 cups of sauce from slow cooker. Mix cornstarch with 2 tbsp cold water. Then add mixture to sauce and simmer on medium-low heat until sauce is thickened. Return to slow cooker and mix well.
- Serve with noodles.
