Recipe Swap! – Spinach, Turkey Bacon, Cheese Quiche with Sweet Potato Crust

Hey y’all! So, I know that Sundays are usually meal prep days…But we are doing things a little different this week! Draz and I still had some food left over (planned for) and extra in the freezer, so I didn’t really do a prep this week. But I did make this delicious quiche!

Now, you may not know it, but one exciting thing that has happened over the past year for me is getting involved with Sweat Pink! Through that, I get to do neat stuff like this recipe swap with Alyse from Alyse MB. Not only am I super inspired by all of these amazing ladies, but it really pushes me to try new things too! They do all sorts of awesome challenges, like the recent #IAmLimitless challenge that they did with Gixo. Do you remember me talking about that a while back? That is just one example of the things they do that help push me to trying out new workouts, products, and more!

This recipe is one of those new things! It’s my first time making something with cast iron (I know, how is that even possible?!?) and the first time I’ve made the crust for a quiche from scratch. I’ve only ever even made quiche a few times before! This quiche is from Recipe Runner and it looks like she has a lot of delicious food! I will definitely be making more from her soon!

This delicious quiche can work for any meal!

 

All in all, this recipe swap was so fun to do and really helped me try out something new! And provided me with tasty meals this week! This is one of Alyse’s favorite recipes and I can see why! Instructions
Sweet Potato Crust
  1. Preheat oven to 425 degrees and spray a 9-in cast iron skillet or other oven proof skillet with cooking oil.
  2. Place the shredded sweet potatoes in a bowl of water and toss around to release some of the starch.

  3. Drain and place the sweet potatoes in a clean towel and squeeze out any excess liquid. (I used paper towels layered over a kitchen towel)
  4. Place the sweet potatoes back in the bowl and add in the egg white, flour, salt and pepper. Toss until coated.
  5. Dump the mixture into the prepared skillet and press into an even layer along the bottom and up the sides.

  6. Bake for 20-25 minutes or until golden.

  7. Remove from the oven and add in the quiche filling.
Quiche Filling
  1. Lower the oven temperature to 375
  2. Heat a medium skillet over medium heat. (Original recipe slightly differs at this direction.)
  3. Using kitchen shears or a knife, cut turkey bacon into bite size pieces and add to the skillet. Cook until crisp, then drain on a plate lined with paper towels.
  4. Remove any excess grease from the skillet, but don't wipe it clean.
  5. Add the green onions and spinach to the skillet and saute until the spinach wilts. Remove from skillet and add to the plate with the bacon.

  6. Once the spinach has cooled enough to handle, squeeze out any excess liquid.
  7. In a large bowl, whisk together all of the filling ingredients, reserving 1/4 cup of the cheeses.

  8. Pour filling into the baked sweet potato crust and top with the remaining cheese.

  9. Place the quiche in the oven and bake for 35-40 minutes or until the filling is set and the top is golden.

  10. Remove from the oven and let it rest for 5-10 minutes before serving.

sunday meal prep 6/26/16

Hey all! Happy Sunday! I hope you all had a fabulous weekend! Ours was pretty good here, though busy. A few things are still being caught up on from me being sick last week, but I think I’m getting close to caught up!  Speaking of me being sick last week….This meal prep is quite possibly the shortest I have ever done. (keep in mind these are staggered by one week, so this post is for last Sunday’s prep) I was still feeling not-too-great, so I planned for quick prep meals and the bare minimum of active cooking. I also forgot to photograph the salads and the picture of the main prep isn’t my prettiest picture by far 🙁 All that being said, I am really glad I still did my prep! I started feeling better on Monday and was back up and active by Tuesday and I’m so glad that I didn’t have to worry about the cooking then! All the food I did make was really tasty too, so at least there is that!

Sunday Meal Prep: April 3, 2016

Hey everyone! Are you as excited for April as I am!? We are FINALLY getting into the warmer seasons and I couldn’t be happier about it. And for the first meal prep of the month, we are starting out on a high note! I absolutely love the recipes I made this week! I am still on my new recipe kick, so these are all new recipes yet again. All in all, this week was pretty simple. I’ve noticed lately that we alternate weeks where I have more to cook or just the basics. Do you notice a schedule like that develops for your meal prep as well?

We still had some energy balls left in the fridge, so this week I all I had to prep for snacks was my grapes and cheese. After all this time, it’s still my favorite snack! Our salads remained the same, though I have been considering switching mine up lately. Not sure if/when I will, but a change might be coming soon!

Now on to the exciting main dishes. This week was amazing. I cooked three main dishes: Slow Cooker Teriyaki Chicken, Saucy Italian Drunken Noodles, and Chicken Fajita Pasta. I’m going to come right out and admit it. I am a serious pasta lover. I love pasta, pretty much of all kinds and tastes. My comfort food is pasta, and I could probably happily eat it every day, though I shouldn’t. All that being said…These Drunken Noodles. I am IN LOVE with these noodles. It was a close call for favorites this week, as all the dishes were delicious. But in the end, for me, the Drunken Noodles won out! In contrast, Draz loved the Chicken Fajita Pasta, which was my close second 🙂 I think you will see both of these recipes again soon! Which, with my recent kick of “every week all new recipes” is saying something!

Sunday Meal Prep: March 13, 2016

Hey everyone! I am so happy to be back with you all for this wonderful edition of Sunday Meal Prep! These last couple weeks of absence were not at all expected and I’m glad for things to be going back to normal. Or as normal as they get around here! I also am pretty excited to bring you this week’s meal prep!

I’ve been trying out some new things lately and one of those new things is Pinterest! I know, I’m really late to this. How did it take me this long to discover how awesome Pinterest is!? Anyways….back from the craziness that is my delayed discovery….Both of our main dishes this week were found on Pinterest. YOU GUYS!… This thing is awesome! I have found so many tasty looking dishes on there, so expect to see a lot of new recipes soon.

So now, without further delay, check out this week’s meal prep!

Kung Pao Chicken Crockpot Stuffed Pepper Soup Weekly Meal Prep

Let’s start out with this Healthy Kung Pao Chicken. It was a huge hit here and will definitely be made again! Draz and I both loved it! The fresh green beans were perfect for this dish. I did use soy sauce instead of coconut aminos, and doubled the chili paste when I discovered that we were sadly out of sriracha. I think next time I may add in some water chestnuts, but that is more to do with my love of water chestnuts than anything lacking in this dish!

The other main dish for the week was Crockpot Stuffed Pepper Soup. I will say, I liked this one more than Draz. It was very tasty though and I see making this one again! Just means there is more for me!

For our snacks, we had all of our regulars: Sweet Potato Banana Bites, Peanut Butter Cookie Dough Protein Bites and my grapes and cheese. I also made some more Sunflower and Oat Energy Bites! Along with our snacks, I made a couple loaves of my Healthier Cinnamon Swirl Bread that we have as part of our breakfasts.

Speaking of breakfasts! This week was also the week that I made more Freezer Breakfast Burritos! I gotta say, I love our breakfast burritos. They are one of my favorite things that I prep that make the week easier. The other favorite is our salads, which are also in this picture! Honestly, if I had to pick just a couple things to prep each week, these would be it.

Sunday Meal Prep: January 31, 2016

You ever have a week where nothing really sounds good? Where you try to plan it out, going through all your recipes and just can’t find anything that fits? That was definitely me this week! This hits me more in the winter months, and this week was especially hard.

Until I found these two soup recipes! These fit my mood perfectly. After I found those, all the rest of the menu just fell into place 🙂

Of course, I also whipped up another batch of Skinny Chicken Enchiladas, Breakfast Burritos and our regular Mason Jar Salads. Along with that, we bought some extra chicken this week and I made extra of both Buffalo and Southwestern Shredded Chicken to freeze for later weeks!

On to the three new recipes!

Tuscan Tortellini Soup – This soup was creamy, rich and oh-so-delicious! Definitely a good choice and I will be making it again. I did make one small change and used evaporated milk instead of heavy cream.

Sausage, Potato and Spinach Soup – A bit lighter than the other soup but no less tasty. It kinda reminded me of a little spicier version of Zuppa Tuscana. I made the same change to this one, using evaporated milk instead of heavy cream.

Slow Cooker Cashew Chicken – I love this recipe…I think I’m finding that I really like recipes with cashews in them!

You know when you think you picked up everything at the store, only to realize later that you didn’t? Well…that is what happened this week! I ended up going to the store to pick up cashews and tortellini about halfway through my cooking session. The tortellini was totally my fault, but I’m blaming Draz for the cashews 😛 I thought we had some left from the last time I used them in a recipe…turns out he enjoyed them as a snack instead!

So when I realized later that I didn’t buy enough eggs to make my normal double batch of burritos, there was no way I was going to the store for a second time! So this week was a bit smaller on the burritos, but still plenty for Draz and I to enjoy 🙂
