Sunday Meal Prep

Hey all, it’s time for this weeks Sunday Meal Prep! This one is a bit smaller than last week. I have found over time I tend to alternate between bigger, more time-intensive Sundays and much smaller, more basic Sundays. This is due to prepping a lot of meals and meal-componenets for the freezer on the larger Sundays.

Also, in the spirit of full disclosure, I have started posting each Meal Prep grouping one week after it was actually made. When I started this series, my intention was to post that same day’s group. However, I have come to realize that it was just too stressful for me to do it that way. The end result would most likely be a sub-par post, and I don’t particularly want to do that, for myself and for all of you!

So, without further delay, here is my Sunday Meal Prep from last weekend!

Peanut Butter Banana Oat Muffins (top) – These have quickly become another staple in our house. I absolutely love these!

Banana and Chocolate Chip Baked Oatmeal Cups These have also become a favorite. We love having them to grab for a quick snack!

Cinnamon Bread – This is based off of an Amish Cinnamon Bread recipe I found over a year ago online. I don’t know where I found it anymore sadly, so I can’t give credit where credit is due. It’s something we eat every day! I love having one slice of this with whatever we are having for breakfast that day šŸ™‚

DSCN0283Mason Jar Salads, 4 small and 6 large – We still had a few left over from the previous week, so I opted to make a few less of the large salads. This is actually the first time I’ve made the small salads and I really like how they turned out! I didn’t include any of the meat I do in the large salads, but did include black beans for the first time. These were great for me to grab for some of our more meat-based dinners this week!

Island Style Pulled Pork – If the Boyfriend has any say about it, this will be made AT LEAST every other week. This seems to be fast-becoming one of his favorite recipes.

That’s it for this week! Not nearly as much as last week, and honestly not as much as most weeks. I hope you enjoyed this view into what you can do with meal prep. It doesn’t always have to be a whole evening! You can make it fit your schedule and your needs, so don’t get discouraged by the idea that you don’t have all day to do this or don’t want to spend your whole day that way. Make it personal!

    1. I’ve almost become fanatical about the mason jar salads šŸ™‚ I have one for work every day and I love how easy it is to have good tasty salad every day when I use them! And the oatmeal cups are the only way I have found that I actually like oatmeal…they are really good. Glad you enjoyed the post!
