Do you remember the first dish you cooked? I do. Up until I was around 20 yrs old, I couldn’t cook. I could make pasta, but that was pretty much it. Then one day, kinda homesick and missing my mom’s wonderful cooking, I decided to make her jambalaya. I honestly don’t know what I was thinking, but I went out, got all the ingredients, and got to cooking. It took forever! I was so slow at everything!Â
After a long time in the kitchen and feeling incredibly nervous, the jambalaya was done. I served up and bowl and was shocked….it actually was good! A bit dry, but good! I realized later that the “bit dry” was from adding 5 cups rice and 3 cups chicken broth, when it was supposed to be the other way around 😛
It was this experience that really started me cooking. It’s taken 8 years, a few really bad dishes and a lot of experimenting, but now I love to cook! And this meal prep series is really my way of sharing that love with others.

While they are very similar, there are some differences. I like red onion in mine and I usually add a few croutons to his. We also tried a new dressing this week, and absolutely love it! Bolthouse Farm’s Classic Ranch 🙂
More jambalaya, by Boyfriend’s request. And a new recipe; Chicken Wild Rice Casserole. It is tasty! I made it without the bread topping this time, but I think next time I will try it with.
